Leon is an expanding international restaurant chain that provides healthy fast food. Their belief is that that food should taste good and do you good – and that everyone should be able to enjoy it.
Challenge
This project was a further expansion across London of this popular, healthy fast food concept, into the busy Notting Hill area. The split-level restaurant required a different approach from their normal template kitchen designs. The main challenges to overcome were the loss of the normal central island and the move to a galley kitchen – a task in itself that needed detailed consideration with the Leon team, to ensure it was operationally feasible, flows worked, and still felt familiar with the staff.
Solution
Working along side this experienced operator, the brief was to design a kitchen that incorporated all the elements that their normal template provided. It needed to deliver consistency in product quality at peak demand, whilst keeping waiting times down. This was coupled with needing to be being easily maintained, cleaned and specified to provide minimum downtime of equipment.
This was achieved by splitting the elements required into sections/modules and ensuring each area was covered with the necessary equipment. Advances depth of their brands kitchen template made this process efficient, effective and delivered on budget.
